The Forrest Family Molasses Pie Recipe
This is a favorite of General Nathan Bedford Forrest
3 egg yolks
1 1/2 cups molasses
2 tablespoons butter melted
3/4 cup brown sugar
1/2 teaspoon nutmeg
1/2 cup cinnamon
1/2 teaspoon salt
1 tablespoon flour
1 tablespoon cornstarch
3 egg whites
1 cup pecans
Sugar to suit
Put egg yolks in wooded bowl and beat until thick. Stir in molasses and melted butter. Combine sugar, nutmeg, cinnamon, salt, flour and cornstarch in separate bowl. Stir together and blend with first mixture. Set aside while egg whites are beaten until fluffy. Fold egg whites into previous mixture. Pour into pastry lined pie pan. Bake 425 for about 15 minutes. Take pie from oven and cover with pecans. Sprinkle with sugar and put back in oven for 15 minutes longer.
Mrs. John Hunt Morgan's Plantation Style Collard Greens
2 lbs chicken necks
3 bunches fresh collard greens
salt to suit
pepper to suit
3 tablespoons bacon drippings
Put chicken necks in pot, cover with water and bring to boil, let simmer for 20 minutes. Remove necks from pot set aside. Put well washed greens in chicken broth. Let simmer until tender. Salt and pepper to taste, stir in bacon drippings, serve hot.
